A corn chowder finished with sweet coconut. KNORR Rich Vegetable bouillon paste gives real depth of flavour.

Preparation

  1. Method:

    • Peel, 1cm dice the potatoes and blanch in salted water for 8 minutes till tender.
    • Peel and dice the onions, red peppers, celery
    • Sweat in a large oiled pan with sweetcorn for 5 minutes till soft
    • Add KNORR Rich Vegetable bouillon paste dissolved in 1.5Ltrs of boiling water.
    • Simmer for 10 minutes with coconut milk and diced potatoes.
    • Blend half of the chowder, mix through and serve.
    • Why not garnish with a little parsley oil, bbq corn & diced roasted pepper
