India's Gaggan Anand, Asia's most awarded chef, is renowned for his rebellious and experimental approach to Indian cuisine. At his eponymous restaurant in Bangkok, Gaggan, he pushes the boundaries of fine dining, creating a culinary experience that is as much about performance as it is about food.

A Theatrical Feast
At Gaggan, guests are invited to abandon their preconceived notions of fine dining and embrace a multi-sensory experience that is both playful and profound. The restaurant's intimate setting, with just 14 seats arranged around an open kitchen, allows diners to witness the culinary magic firsthand. Dishes are presented with theatrical flair, accompanied by music, light shows, and even singing and dancing by the kitchen team.

Chef Eric began his career as a trainee chef at Swissôtel’s Stamford Hotel in 2003. He honed his expertise in multi-cuisine cooking, which has included working at a Michelin-starred restaurant before joining Unilever in 2009. He proudly holds numerous gold medals and top honors from regional and international competitions, including a double gold win at the Culinary World Cup 2010 in Luxembourg. In his role at Unilever Food Solutions, he is dedicated to pioneering innovative dishes and solutions that shape the culinary future.

The dining experience is evolving beyond generic customisation, moving towards more interactive and personalised experiences. Diners are increasingly seeking to actively participate in meal creation and modification, craving a sense of ownership and engagement with their food.
 
This shift is driven by a number of factors, including a growing desire for personalised and immersive dining experiences, a preference for curated choices, and technological advancements that are reshaping how meals are experienced.

Key Strategies for Personalisation:
- Create Topping Stations: Set up a salad or wrap bar with a variety of toppings, allowing diners to craft their own dishes.  
- Custom Dressing Stations: Introduce a variety of interesting dressings and sauces, enabling patrons to mix and match and create unique flavor combinations.  
- Offer Flavour Profiles: Provide diners with a choice of dynamic flavour profiles, such as spicy, tangy, or sweet, to incorporate into their dishes.  
- Build-Your-Own Options: Offer a selection of base ingredients for salads or wraps, allowing diners to choose their preferred proteins, vegetables, and grains.  
- Seasonal Specials: Rotate seasonal ingredients and limited-time offerings to encourage repeat visits and provide fresh, exciting options.  
- Feedback Loop: Encourage diners to provide feedback on their personalised dishes, allowing the restaurant to refine offerings and build a closer relationship with its clientele.
